Low Carb Bacon, Egg, and Spinach Breakfast Casserole



With a paleo twist, this low-carb breakfast casserole with bacon, egg, and spinach is a filling and healthy way to start the day. It's a great low-carb or paleo breakfast choice because it's low in carbohydrates and high in protein.

Ingredients:

  • 6 slices of bacon, cooked and crumbled
  • 8 large eggs
  • 1 cup baby spinach leaves
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1/2 cup diced mushrooms
  • 1/2 cup almond milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions:

Preheat your oven to 350F 175C and grease a 9x13 inch baking dish with cooking spray or oil

In a large mixing bowl, whisk together the eggs, almond milk, garlic powder, onion powder, paprika, salt, and pepper

Layer the cooked and crumbled bacon, baby spinach, diced bell pepper, diced onion, and diced mushrooms evenly in the prepared baking dish

Pour the egg mixture over the layered ingredients in the baking dish

Bake in the preheated oven for 30-35 minutes or until the casserole is set and the edges are golden brown

Remove from the oven and let it cool for a few minutes before slicing and serving
