Cabbage Potato Pie



This pie is perfect for a cozy vegan dinner because it is full of tender potatoes and flavorful cabbage.

Ingredients:

  • 1 medium-sized cabbage, shredded
  • 4 medium-sized potatoes, thinly sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 pre-made vegan pie crust

Instructions:

Before you start cooking, heat the oven to 375F 190C

Warm up the olive oil in a big pan over medium-low heat

Put in the garlic and onions, and cook them until they become clear

Shred the cabbage and cook it until it softens

Add the vegetable broth, thyme, oregano, salt, and pepper, along with the sliced potatoes

Mix well

Put the lid on top and cook for 15 to 20 minutes, or until the potatoes are soft

Take it off the heat and let it cool down a bit

Use the ready-made vegan pie crust to line a pie dish

Fill the pie crust with the cabbage and potato mix

Spread it out evenly, and if you want, add another layer of pie crust on top

Cut a few holes in the top crust to let air flow

After the oven is hot, bake for 30 to 35 minutes, or until the crust is golden brown

Take it out of the oven and let it cool down for a few minutes before cutting it

Enjoy while still warm!
